'Trash' Trail Mix

Today I wanted to share a favorite family recipe with you! Every year around the holidays my mom, sisters, and I get together to make what we call 'trash'. This is super easy to make and taste so yummy!

ingredients for trail mix

4 cups of Chex corn cereal
4 cups of Chex wheat cereal
4 cups of Chex rice cereal
4 cups shoe string potatoes
4 cups Frenchs fried onions
8 tbls worchester
1 stick of butter
2 tbls garlic salt
2 packages of taco seasoning
(There are nuts pictured above and they are optional. I don't like them so I chose not to add them.)

1. Preheat the oven to 225 degrees

2. Mix the cereals, fried onions, and shoe string potatoes. Stir and make sure they are well mixed and then add the taco seasoning and garlic salt.

3. In a small sauce pan melt the stick of butter and worchester together.

4. Once the butter is melted pour a 3rd of it on the cereal mixture. Stir and add another 3rd. Mix and repeat.

5. Add the lid and put it in the oven for 15 minutes. After 15 minutes take it out and stir, repeat every 15 minutes for 45 minutes.

6. Put in little containers and eat up!

Lasagna Bites

The first (or second) Monday of every month my mom and I get together with a group of women and play Bunko! It is such a fun time of fellowship. So last night I made Cookie Dough Dip, you can get the recipe here. BUT I also made Lasagna Bites!

I found a recipe on Pinterest, but I modified it so I thought I would share my modified version here!

1lb of ground beef
1 can of your favorite sauce
Mozzarella Cheese
Cheddar Cheese
2 or 3 cans of biscuits

1. Fry up the meat.

hamburger meat

2. While the meat is frying spread out the biscuits and press them against the sides of a muffin tin. (The recipe I found on Pinterest used lasagna noodles, but I found that they were too hard once you baked them.)

3. Once the meat is cooked fully, drain it. Then add the sauce to the meat and mix. I also add some cheese so it can melt in.

4. Add a spoon full of the mixture to each biscuit. And top with cheese.

5. Bake in the oven according the directions on the biscuits.

freeze and reheat

Everyone at the party loved them, and I did too. I will definitely be making them for Joel and I for dinner. Served with a salad they would be great for a meal!

*Update 10/2013 - We froze them and reheated them for dinner a week later and they were delicious! Just the same as having them freshly made. I have also made them and taken them for lunch the next day.

The one with trash

I absolutely love everything about Christmas. The music, the lights, the smells, the cold weather, I mean everything. But there is one thing I love the most. TRASH. Trash is a special trail mix that my family (my grandma and mom) makes only at Christmas time. I absolutely LOVE it. Several years in the past I have made myself sick eating too much of it at once. Please enjoy some pictures of us making it.

I did not take picture of all the ingredients, it wouldn't be special if you all knew the recipe.

My batch, I don't like all of the nuts in mine.

Thanks Mom and Grandma for making trash again this year! Now I am all set bring on Christmas!

*In my house we eat all of the trash, but if your family won't eat it all it makes a great gift. You can put it in little Christmas containers and give them away to friends!!

New Family Favorite

Tonight I tried a recipe that I had seen on Rachel Ray Bar-B-Que Chicken Pizza.

Joel doesn't like tomatoes or tomatoes sauce so when I saw this recipe I thought he would like it. And it is so easy to make!

1 Chicken breast
Cheese (as much or as little as you want)
Bar-b-que sauce
Store bought crust (on Rachel Ray she use store bought crescents, but that is a little more work because you have to cook the crust twice.)

First of take a piece of chicken and cut and cook it in a skillet. (I only used one piece because that was more than enough meat for Joel and I but you might want to use more.)

While the chicken is cooking, pull out your store bought crust and cover with bar-b-que sauce.

BBQ sauce

Then add the cheese

add a little cheese

Top it off with pepperonis and chicken

BBQ pizza

Bake in the oven at 350 degrees for about 15-20. (Depending on how crispy you like your crust.) And enjoy!

Try it and let me know what you think! Joel and I loved it!!
